Bush Pizza.

Also known as Island Pizza. I got this recipe from a second year volunteer, Sandra, when I went to visit her rather isolated site. I finally tried it out in my bush kitchen and it turned out amazingly. The only problem is not having access to flour. And then the little weevil guys like to move in- I typically just bake them in to my food until I notice their larvae crawling around and then I throw them out. Mmmmmm. Extra protein.

I use flour, smal soda, smal salt, smal oil and smal water for the crust.

You can find individually packaged pizza sauce at the grocery store. Mine is several months expired but still tastes fine.

Put whatever meat, cabbage or herbs you want on top of that. I used fresh basil, green onion, and arugala from my garden.

I used Mexican oregeno and French Thyme that I got in the mail from my personal spice wrangler.

Scratch and put strong coconut milk (don’t add water) on top. This will heat up and become thick and creamy- alllllmost cheese-like.

I sprinkle cheapy island curry powder on top.

Put the pizza inside a lightly oiled saucepan. lid on. LOW fire. heat over fire until crust is cooked through- around 10 minutes maybe?

 

Soooo yummy. Especially after a month of nothing but root crops and boiled cabbage.
