Wan Banana Keik
Milk Coconuts
Add all other banana keik ingredients together. I prefer to use “Vietnam” bananas and use 4 ripe ones.
Prepare the oven.
Make a fire on top of black stones.
Put a few larger stones on top of the fire and coconut husks last. Put saucepan on top of fire to “preheat”. If doing dutch oven style, put a cup or two of sand in the bottom of the pan first and then preheat.
After fire has gone down, oil the pan and add the cake mix. If using dutch oven style, lightly oil the silicon baking pan and place inside the pan on top of the sand.
Make sure the coals are broken up into small pieces or the bottom of the cake will burn.
Place saucepan on top of the hot stones/coals.
Put a few hot coals and 2-3 hot stones on top of the pan lid.
Put a few coconut husks on last.
Cook 18-40 minutes. This takes your nose, and a sense of how hot the coals and fire is to know when to check it.
what not to do
Best to take OFF the stones and coals before trying to peek inside the lid or you might end up with a cake avalanche like this one. I ended up cutting off the burned parts/ash and flipping it upside down and everybody still loved it. Flour is NOT to be wasted at my site!
Second try a charm.
